MASTERCHEF MUMMY KI RECIPES

ROTI POHA \ UPMA
• To make roti ka poha, break the rotis into small pieces. (You can also grind it coarsely in a mixer To Make Roti Upma.)
• After that chop the onion and green chili too finely.
• When oil is hot, add mustard seeds, cumin seeds, fennel seeds, and asafoetida.
• When the cumin seeds are light brown, add curry leaves, green chili, groundnuts, and onions and fry them till the onion becomes light brown. Keep the flame on medium.
• When onion becomes light brown then add salt, red chili powder, turmeric powder, coriander powder, and stir it with a spoon.
• Now add finely coarsely roti, sugar, and lemon juice and mix it with all the spices.
• Now sprinkle a little water over it.
• Then cover it for 2 to 3 minutes and let it cook on low flame.
• Garnish it with green coriander and serve it in a bowl.

ROTI TACOS
• Firstly, take leftover roti and spread 1 tsp tomato sauce.
• Now place a slice of cheese.
• Top with 2 tbsp prepared veggies and 1 tbsp schewan sauce.
• Fold half and toast on low to medium flame until the tacos turn crispy.
• Enjoy roti tacos.

ROTI BURRITO
• Firstly take two leftover rotis, and place them in a way that is overlapping.
• Spread the stuffing of chopped vegetables.
• Spread a layer of mayonnaise.
• Spread a layer of schezwan sauce.
• Spread some paneer and sweet corn.
• Wrap it from all four sides and toast it on the pan.

ROTI SANDWICH
• Take leftover roti and spread ½ tsp green chutney and ½ tsp of mayo on it.
• Grate the cheese generously covering the roti.
• Now on one half spread in the prepared vegetable stuffing.
• Cut one side of it and fold the roti and press gently without squeezing out the stuffing.
• Toast the roti sandwich on medium hot tawa.
• Finally, enjoy roti sandwich with sauce.

ROTI ROLLS
• Take one roti on a plate and spread 2 teaspoons of chutney.
• Add warm potato stuffing in the center.
• Top with prepared salad and sprinkle chaat masala on top.
• Make a roll and keep one side open. Secure the top with toothpick, so it stays intact.
• Serve immediately.

ROTI PIZZA
• Firstly, heat tawa with ½ tsp butter. you can alternatively bake in an oven.
• Once the butter melts, warm chapati/roti slightly.
• Now turn off the flame and spread 4 tsp pizza sauce.
• Further top with capsicum, onion, sweet corn and paneer.
• Also spread ½ cup mozzarella cheese.
• Further sprinkle ¼ tsp chilli flakes and ¼ tsp mixed herbs.
• Now cover and simmer for 3 minutes or till cheese melts completely.
• Finally, slice the roti pizza and serve hot.

ROTI NOODLES
• Firstly, take 5 chapati and roll tight.
• Cut into thin strip forming noodles.
• Separate the chapati strips and keep aside.
• Now in a large kadai heat 3 tsp oil and saute 3 clove garlic and 1 green chilli.
• Also, saute ¼ onion and 2 tbsp spring onion.
• Further add ½ carrot, ½ cup cabbage and ½ capsicum.
• Sauté slightly till the vegetables shrink.
• Now add 2 tbsp tomato sauce, 1 tbsp vinegar, 1 tbsp soy sauce and ¼ tsp salt and black pepper.
• Mix well making sure sauces are combined well.
• Further, add prepared chapati strips, 2 tbsp spring onions and mix gently.
• Finally, serve chapati noodles hot or pack to a lunch box.

ROTI PANCAKE
• Take two three rotis
• Cut them in four pieces.
• Spead chocolate syrup and top it with banana.
• Make 4-5 layers of roti in this way.

ROTI LADDU
• Firstly, take 7 leftover roti and roast on low flame until it turns crips.
• Break into pieces and transfer to a mixi.
• Blend to a coarse powder.
• Now in a pan heat 3 tbsp ghee and roast 2 tbsp raisins, 2 tbsp cashew and 2 tbsp almond.
• Roast on low flame until it turns golden brown.
• Transfer the roasted nuts over roti powder and mix forming a moist mixture.
• In a pan take ¼ cup jaggery and 2 tbsp water.
• Stir and dissolve the jaggery keeping the flame on medium.
• Pour the jaggery mixture over roti mixture and mix well.
• Also, add ¼ cup mawa and ¼ tsp cardamom powder. Mix well.
• Finally, prepare a round-shaped ball and enjoy roti laddu for a week when refrigerated.
