Serves 2 with letfovers
Takikomi gohan:
1Tbs Hijiki seaweed (rehydrated)
1/2 cup carrots, cut into 1 inch matchsticks
1/2 package of shimeji (beech) mushrooms
1.5 rice cups of rice (or 3/4 regular cup)
1 Tbs mirin
1 Tbs Sake
1 Tbs mirin
1 tsp Dashi granules
Spinach Salad:
1 bunch spinach
1 Tbs sesame dressing
To make your own dressing:
2 Tbsp Toasted white sesame seeds (ground)
3/4 Tbsp sugar
1 1/2 Tbsp soy sauce
1/2 tsp sake
1/2 tsp Mirin
Charred lotus roots:
Sauce:
2½ Tbs Mirin
1 Tbs rice vinegar
2 Teaspoons soy sauce
2 Tsp Oyster Sauce
½ tsp sugar
6-10 lotus root slices
1/2 pack shimeji mushrooms
